Description
Bayab takes its name and its character from the majestic baobab, the upside-down tree of the African savannah. Made at Midlands Distillery in the green hills of KwaZulu-Natal, it begins with locally grown sugar cane and the region's clean water, distilled in traditional copper pot stills. Alongside juniper, rosemary, lemon peel and orange sit a pinch of sea salt and the tart, vitamin-rich fruit of the baobab itself, giving the spirit a distinctly South African signature.
The nose is a fresh, citrus-led affair of lemon and orange peel over tart juniper and a subtle rosemary lift. On the palate it is full-bodied and complex, the bright citrus and resinous juniper underscored by a light saline note that lends the baobab real depth, before a long, mildly spiced finish. Pour into a classic gin and tonic with a twist of orange peel or a sprig of rosemary.
