Karuizawa distillery, the single malt operation at the foot of Mt. Asama in Nagano Prefecture operated by Mercian, distilled from 1956 until closure in 2000 and was demolished in 2016. Cask number 78, a 1981 vintage, was matured for 31 years before being selected by La Maison du Whisky and bottled in 2013 for the French market.
The maturation vessel was a sherry butt seasoned with Oloroso, consistent with Karuizawa's approach. The flavour note recorded for this cask is leathery, one of the defining notes in long sherry maturation on Karuizawa spirit: the aged, worn leather quality that develops alongside stewed dark fruit, bitter chocolate and warming spice in casks that have spent three decades in Nagano's cool mountain conditions. Karuizawa's heavy use of Golden Promise barley gave the spirit the density to carry that leathery register without thinning. Bottled at 60.5% cask strength.
