Description
Karuizawa, a single malt distillery below Mt. Asama in Nagano Prefecture, operated under Mercian from 1956 until closing in 2000 and was demolished in 2016. This single cask from 1981 was held for 35 years before being bottled in 2016 for the Dutch market, part of the ongoing series of releases as stocks from this era continue to be drawn and distributed.
The maturation was in an Oloroso sherry cask, which at Karuizawa meant long, slow contact between spirit and heavily seasoned Spanish wood in a cool mountain climate. The distillery used imported Golden Promise barley and produced a spirit well suited to extended sherry ageing: rich enough to absorb decades of cask influence without losing its structure. The typical result for this combination is concentrated dark fruit, leather, bitter chocolate and a lingering spiced finish. Bottled at 58% from a single cask.
