Description
Karuizawa distillery, located in Nagano Prefecture at the base of Mt. Asama and operated by Mercian, produced single malt from 1956 before closing in 2000. The site was demolished in 2016. Cask number 155, a 1981 vintage, was matured for 31 years before La Maison du Whisky selected it for their French bottling series, released in 2013.
The cask was a sherry butt seasoned with Oloroso, the wood format central to Karuizawa's identity. The flavour note recorded for this cask centres on cooked fruit, the stewed, jammy quality that develops in long sherry maturation as the fresh dark fruit of earlier years concentrates and deepens. Alongside the cooked fruit, the Karuizawa house character from Golden Promise barley and small pot still distillation typically adds leather, warm baking spice and a persistent finish. Bottled at 56% cask strength.
