Description
Karuizawa distillery at the foot of Mt. Asama in Nagano Prefecture operated from 1956 until its closure in 2000. This 1971 vintage single cask was matured in an Oloroso sherry butt for 37 years before bottling at cask strength in 2008 as a distillery release for the European market, at 64.1% abv.
The flavour profile here is a vivid portrait of long Karuizawa sherry maturation: cooked fruit and dried fruit from the sherry butt, tobacco and leathery depth from oxidative old wood, and an oily, almost waxy texture that is characteristic of the distillery's small pot stills and Golden Promise barley spirit. Thirty-seven years in a good Oloroso butt builds this complexity without tipping into the very darkest, most extract-heavy notes of the 40-plus-year casks, making this a richly detailed rather than simply overwhelming expression of the distillery's defining style.
