Description
Hatozaki 12 Years Old is a blended malt from Kaikyo Distillery in Akashi, Hyogo, bottled in 2022 and carrying an age statement of twelve years. Given Kaikyo's 2017 opening, the 12-year-old liquid draws on mature sourced malt stock, a common approach among younger Japanese houses building age-stated releases while their own spirit matures.
The whisky spent its primary maturation in Ex-Bourbon casks before a finish in umeshu casks, which impart the soft plum and apricot sweetness that defines Kaikyo's house identity. The flavour profile runs to honey, dried fruit, malt extract and a light woodiness from the longer ageing, with the umeshu finish adding its characteristic gentle sweetness. Bottled at 46%, it retains texture without being overbearing.
