Heimat Distillers sourced this Demerara from DDL in Guyana and finished it themselves in Pedro Ximenez sherry casks under their Ramero Rum label, bottling it at 46%. Distilled at Diamond and matured partly in southern Germany, it pairs the cleaner Guyanese spirit with a generous PX sherry influence for a soft, fruit-forward result.
The nose is sweet with sherry, raisin and ripe fruit, and the palate is supple and fruity with raisin and sherry leading, the PX cask shaping much of the character. The finish stays sweet with raisin, mango and a touch of wood. This is a gentle, accessible reading of Demerara, the sherry casks giving it rounded dried-fruit and chocolate notes rather than the dry, woody bite of a heritage still bottling. It is an easygoing sipper built on the marriage of Guyanese molasses rum and sweet sherry wood, pleasant and approachable. One for drinkers who enjoy the softer, sherried side of rum over the raw character of a full proof single still.
