An Italian white rum reviving an old method of fire-concentrating fresh cane juice before fermentation and pot distillation, unaged at 47% yet leaning unexpectedly dark with chocolate, cocoa and roasted almond over a woody core.
Description
Esperia Rhum Blanc comes out of Italy as an unaged white built around a deliberately old idea, concentrating fresh cane juice over direct fire before diluting, fermenting and running the wash through a pot still. That fire-driven concentration is the whole story of the bottling, a nod to a rum-making approach that predates modern column efficiency, and it leaves a spirit with more weight and presence than the pale colour suggests.
Worked from sugar cane honey and combining pot and column distillation, it carries a darker register than most white rums reach. The nose turns on chocolate, the palate stays woody and cocoa-edged, and the finish settles into fudge and roasted almonds. Bottled at 47% with no barrel time, it reads as a maker's experiment in flavour built before the cask rather than from it, dry in frame and best met neat by anyone curious about pre-industrial technique.
