Spirit of the day #3 2017 is a single cask Reunion rum bottled at cask strength of 60.9%, drawn from the 2017 vintage. Made from molasses rather than cane juice, it sits in the bold, savoury Savanna-adjacent style that the island is known for, rather than the grassy agricole camp.
Distilled on a column still and matured in ex-bourbon oak, it brings buttered caramel, tropical fruit compote, olives and a light brine over firm wood and spice. The strength runs hot and the alcohol sits forward, so this is one to give time in the glass or a drop of water, after which the fruit and savoury notes settle.
