Clairin is Haiti's village cane-juice rum, made from fresh sugar-cane juice with wild, spontaneous fermentation and bottled unaged at high proof, agricole in spirit but unable to use the word. This Sonson Pierre Gilles bottling is distilled on a pot still, which lends extra weight to its already forceful character.
The profile is pure, unfiltered Haitian tradition: intensely herbal and mineral on the nose, with grass, olive and root notes, turning fresh, earthy and spicy on the palate before a smoky, saline, long finish. At 51% it is robust and savoury, closer in feel to a grassy agricole or even a mezcal than to anything sweet. This is a wild, terroir-driven spirit for drinkers whose palates already crave the rawest, most vegetal end of cane rum, best neat or in a punchy cocktail.
