Description
Providence is a Haitian pure single rum from the Distillerie de Port au Prince, bottled by Velier, the Genoese house that brought Haiti's village cane spirit to a wider audience. Clairin is agricole in spirit but cannot use the word, made from fresh cane juice with wild, spontaneous fermentation that gives it a turbo charged funk all its own.
This lot was pot distilled and aged three years in ex bourbon casks, taming the wilder edges while keeping the spirit fresh and characterful. The nose is buttery, herbal and round on sugarcane, the palate herbal and spicy, and the finish runs vegetal and minty with a faint iodine and rubber lift. At 52 percent the alcohol is well knit, and it stays clean and unsweetened, an honest, herbaceous sipper that also makes a striking daiquiri.
