Description
Bottled by Velier for La Maison du Whisky, this Chelo Vieux Sajous comes from Haiti's clairin tradition, made from sugarcane honey with the wild, spontaneous fermentation and single-village terroir that defines the style. Clairin is agricole in spirit but cannot use the word; this one is aged five years and bottled unsweetened at a powerful 58.3 percent.
Pot still distilled and matured in ex-bourbon wood, it keeps the raw Haitian soul while gaining depth: fresh fruit, olives, herbs and earthy minerality on the nose, with a herbal, sugarcane-driven palate and light wood. The finish is woody, floral and spicy with a tannic grip. A faint estery funk nods toward Jamaica without overwhelming the terroir. A characterful neat sipper for drinkers chasing high-strength, terroir-led Haitian rum.
