Drawn from a single ex-bourbon cask filled in 2001, this is a 23 year old pot still rum from South Pacific Distilleries in Fiji, bottled at natural cask strength under Maison Ferrand's Planteray Foundation line. Fiji 2001 pot still has earned a following among drinkers who chase ester driven character, and this release sits firmly in that camp, leaning drier and woodier than most.
Distilled from molasses on a pot still and matured in tropical heat, the spirit carries a heavy tobacco and ester signature alongside overripe banana and pineapple. The palate runs spicy, woody and floral with a fruity undercurrent, while the finish turns smoky and faintly rubbery in the way long aged Fijian rum tends to. Sweetness is restrained and the 51% strength gives it weight without harshness, making it a rum that rewards patience in the glass rather than a casual pour.
