Description
This CDI Florida 2004 is an American single cask bottled by Compagnie des Indes, drawn from a 2004 vintage and aged 18 years before bottling at a robust 58.6% cask strength. Florida is a rare origin for aged rum, and this ex-bourbon matured, certified unsweetened release leans firmly in a bourbon like direction.
The long maturation has built a dry, wood forward spirit. The nose brings fruity freshness with vanilla, brown sugar, molasses and toasted coconut, the palate turns woody and fruity with tropical fruit and noticeable heat, and the finish carries fruit, vanilla, brown sugar and chocolate. There is plenty of oak and a clear alcoholic bite, so it benefits from a little water to settle, and despite its age it stays relatively straightforward rather than deeply layered. It works neat with dilution and holds up well in mixed drinks, an interesting and different pour for explorers who enjoy drier, higher proof rums.
