Description
Dictador is Colombia's best-known rum name, built on a solera-leaning house style of coffee, cocoa, vanilla and dried fruit. This Sinfonia Pardo is a step apart from the core range: a single cask drawn from a 1999 vintage and carrying 23 years of age, made from molasses at Destileria Colombiana in Cartagena. Aged in ex-bourbon oak and bottled at 43%, it should show the darker, more roasted side of the Colombian style, with oak spice and a dried-fruit sweetness running underneath. Single-cask Dictador releases like this give a more focused, less blended read than the soft house bottlings. Sweetness is not disclosed, so expect a rounded profile rather than a dry one.
