Description
Sajous is one of the village clairins Velier has championed, here a Chelo bottling of Haitian cane juice rum, unaged and bottled unsweetened at 54.2%. Made from fresh cane with wild, spontaneous fermentation, it is agricole in spirit but, being Haitian, carries the name clairin rather than the protected term.
This is the briny, savoury extreme of the cane juice world. The nose is all green olive, vegetal grass and freshness, the palate piles on olive, grass and an oily weight, and the finish stays herbal and saline with a touch of citrus. Pure, raw and unsweetened, it leans into a salty-olive intensity that recalls the wildest agricoles. Best neat for those who chase funk, or in a Daiquiri or ti' punch where its snap cuts through.
