An unaged high-proof Foursquare white from Velier blending molasses and cane juice, a raw look at the base spirit with fermented tropical fruit, solvent, vegetal notes and mineral salt, bracing neat and built for daiquiris at 62%.
Description
Triple Entente is a Velier bottling of unaged Foursquare pot still rum, a white spirit that lays the Barbados base bare. Velier is the most prestigious name in collectible rum, and this release strips away the cask entirely to show the distillery's distillate before maturation, an educational, full-proof curiosity rather than a polished sipper, and the copy is honest about that.
Distilled from a blend of molasses and sugar cane juice on the pot still and left unaged, it is raw and high-strength. The aroma carries fermented and overripe tropical fruit, ester and sweetness, the palate turns fermented, vegetal and creamy with a sweet edge, and the finish runs bitter, vegetal and briny. The glue and solvent notes, mineral salt and vegetal weight are all part of the unaged picture, intense and challenging neat. It comes into its own in a daiquiri, where its fermented fruit and salt drive the drink, a revealing look at the spirit at 62% rather than an easy pour.
