    Saint Aubin makes its Rivière des Créoles from fresh-pressed sugar-cane juice on Mauritius, so while it shares its method with French-island agricole it is correctly described as agricole-style rather than AOC rum. This expression spends six years in ex-bourbon oak, enough to round off the raw cane edges and pull the spirit toward dessert.

    The character here is unusually pastry-led for a cane-juice rum, with coconut, milk chocolate, confectionery and creme brulee on the nose, then coconut, vanilla, allspice and pepper across the palate. That gourmand, accessible structure is typical of Mauritian rum, smooth and easy to drink, with a faint green, eucalyptus lift keeping it from turning one-note. Bottled at 49.2% without any stated sweetening, it sits between a sipping rum and an agricole, best enjoyed neat by anyone who finds classic blancs too austere.
