Bottled under the Braud & Quennesson name from Distillerie du Simon spirit, this Signature du Chai is a 2022 Martinique agricole aged one year in oak, the élevé sous bois tier that sits between blanc and vieux. At 47% and unsweetened, it shows fresh cane character lightly framed by wood.
Pressed from fresh sugarcane juice and distilled on a creole column run low to hold the vegetal congeners, it takes just enough barrel time to round its edges without losing its youth. The nose offers fruit, young wood, honey and spice, the palate brings allspice, light oak, tropical fruit and vanilla, and the finish carries citrus, young wood and a touch of honeyed sweetness. It is clean and straightforward rather than complex, the alcohol nicely integrated for the strength. An honest, unsweetened pour that drinks easily neat or stands up in a cocktail.
