Description
Velier's clairin project showcases Haiti's village rums, and Casimir is one of its flagship producers, working from heirloom cane and spontaneous fermentation. This 2015 Ansyen, named for Jimmy Bertazzoli, is a pot still clairin drawn from a single cask.
Distilled on a pot still from fresh cane juice and rested just over two years in ex-bourbon barrels, it is bottled unsweetened at cask strength. Pot distillation pushes the funk even further, so expect the turbocharged clairin character of green cane, olive, brine and earthy intensity, here given structure by oak. A single cask at 48.9% for those who want Haitian rum at full force.
