Copalli is made by Copaltree in the Belizean rainforest, a single estate operation that grows its own sugarcane and works to a strongly organic, low waste model. This Bold expression is the higher strength white, built from molasses off the estate's black cane and bottled unaged at 43%. The extra proof over a standard light rum gives it more presence and a fuller cane character while keeping the clean, fresh profile of an unaged spirit.
