Description
Caroni is the most mythologised name in rum, the closed Trinidad distillery whose casks Velier rescued and bottled at full proof, championing tropical ageing. This Paradise number seven release draws on the 1994 vintage, a heavy Trinidad rum carried to 26 years and presented unsweetened at 58% cask strength.
Distilled from molasses and matured in ex-bourbon oak, it is a dry, powerful expression in the classic mould, with petrol, tar and workshop notes wrapped in old wood, roast and spice, lifted by menthol and a seam of dark chocolate. The long tropical ageing is plainly audible in the depth of the oak and the very long finish. This is a serious sipping rum for slow, focused sessions, the heaviness and intensity tuned for seasoned drinkers who already enjoy full-proof Caroni and want extra age and wood behind the oily funk.
