Description
Bottled by Velier, the standard-bearer for collectible rum, this Casimir clairin is unaged Haitian cane-juice spirit distilled on a pot still using wild, spontaneous fermentation. Agricole in everything but the protected name, clairin is village rum built on heirloom cane and single-source terroir, and Casimir is among the most savoury and extreme of the style.
This is not a smooth introduction. The nose is fresh and vegetal with olive and sugarcane, verging on rotten in the way high-funk clairin does, and the palate is peppery, vegetal and savoury, drawing comparisons to tomato, turmeric and soy sauce alongside black tea and menthol on the finish. Bottled unsweetened at a full-proof 54.3%, it is uncompromisingly raw and umami-driven, a rum that divides drinkers on purpose. For the funk-seeker it is a fascinating, terroir-loaded glass; for anyone wanting sweet and easy, it will be a shock.
