Matusalem Sublime sits at the head of this Dominican house's range, an extra anejo carrying roughly fifteen years and a presentation pitched at the gifting end of the shelf. It works firmly in the soft, dessert-leaning Spanish style, where age in oak and the blend, more than the spirit itself, define the character.
Matured in ex-bourbon barrels and bottled at 40%, it pours dark and reads woody and raisined, with chocolate, dried figs and a roasted, slightly burnt-sugar depth on the palate.
