Bologne is a Basse Terre distillery in Guadeloupe, and this Ethique blanc is made from organic, fresh pressed sugar cane juice in the agricole style, bottled unaged at a firm 50%. The organic credentials and keen pricing set it apart, while the higher proof gives it the structure for a lively Ti Punch.

With no barrel involved, the spirit shows the freshness and snap of cane juice. The nose is bright and citrus driven with fresh sugar cane and lime, the palate keeps that citrus and adds a floral lift and more cane, and the finish turns peppery with a hay like, herbal note. It is a touch less spicy and more fruit forward than some of the house's other blancs. A clean, well priced organic white for drinkers who enjoy bright agricole, at its best in a Ti Punch or as a fresh sipper.
