    The Colours of Rum, the young Polish house known for purist single casks, bottled this 30 year old Demerara from 1991. Although carried under the Uitvlugt name, the data points to a double wooden pot still profile, so the dependable read is that heavy pot still character: dark, oily and built on marzipan, anise and tea rather than light fruit.

    Matured with a Port cask influence and bottled unsweetened at a formidable 68.7%, it is intense and demands respect. Expect marzipan, cocoa, black tea, prune and spice over oak that three decades have kept in check, with a burnt-sugar finish. At nearly 69% a few drops of water open it considerably. This is a slow, serious pour for experienced drinkers who enjoy old Guyanese rum at full power.
