An 11 year old single cask Diamond off the Savalle column, bottled cask strength and unsweetened by Duncan Taylor for Quarterdeck, showing the fresh, green side of Guyana with banana, lime and green apple over a light milk chocolate finish.
Description
Duncan Taylor Diamond Quarterdeck Single Cask 2010 is a single cask Demerara from the Diamond distillery, bottled cask strength by the Scottish house Duncan Taylor under its Quarterdeck label. The Diamond name points to the metal Savalle column, the lightest and cleanest of the Guyanese stills, and at eleven years this cask shows that fresh, fruit-forward profile clearly.
Declared unsweetened and bottled at 50.9%, the rum keeps a bright, lively character. The nose is fresh and green with banana and green apple, and the palate follows with lime, banana and more green apple over a clean spine. The finish is light and mild with a soft milk chocolate note rounding it off. This is the approachable, orchard-fruit face of Demerara rather than the heavy timber of the wooden pot stills, a crisp single cask that drinks well above its modest weight without any sugar to prop it up.
