Description
Nobilis Romero & Sons No. 19 2005 is an unusual bottling, a Spanish style rum from the Romero & Sons distillery in Ecuador, selected as a single cask by Nobilis Rum. Distilled in 2005 from molasses on a column still and bottled at 17 years, it arrives unsweetened and at a serious 69%, a rare chance to taste Ecuadorian rum at full strength.
Long ageing in ex bourbon has built a dark, savoury core. The nose leads with chocolate, caramel and hazelnut over a spicy lift, the palate turns nutty and chocolatey with more caramel and warm spice, and the finish carries tobacco, roasted notes and a nutty depth. There is a fresh counterpoint too, citrus, pome fruit and a floral edge that emerges with air. At this proof it benefits from time in the glass or a few drops of water, which coax the roasted wood and dried fruit forward. Dry, intense and built for experienced palates.
