A single cask 28 Year Old Enmore at 51.8%, unsweetened and aged in ex-bourbon, layering roasted oak, dark chocolate, dried plum and tobacco into one of the most balanced expressions of this wooden still.
Description
Perola bottled this 1994 Enmore under its Bellamy's Reserve label, carrying the REV-era character of Diamond's wooden Coffey still, the last of its kind in the world. Twenty-eight years in cask have given it real depth, yet at 51.8% it stays poised rather than punishing, a single cask that rewards attention.
Molasses distilled on the wooden Coffey and matured in ex-bourbon, it shows leather, pencil shavings and dried dates on the nose, then roasted wood, dried fruit and mocha on a palate that holds its intensity in check. The finish is woody and leathery with a roasted edge. Bottled dry, it lets the still and the long tropical-influenced ageing speak, a benchmark old Guyanese rum for those who like fruit and dark wood in equal measure.
