Infinity Spirits bottled this single cask of New Yarmouth for The Royal Cane Cask Company, a 27 Year Old from 1994 at 60.3%. New Yarmouth, which runs both pot and column stills in Clarendon, has become a favourite of independent bottlers, and the 1994 vintage in particular has a strong following.
This column still expression leans rich and creamy rather than wildly funky: coconut, vanilla, caramel, dried fruit and polished wood dominate, dangerously easy to drink for its strength. Matured in Ex-Bourbon oak to full cask strength depth, it shows the smoother, more elegant side of New Yarmouth while keeping plenty of intensity. With sweetness left as supplied by the cask, it is an indulgent, contemplative sipper for drinkers who want richness over aggression.
