Bologne Grande Savane Rhum Bio 2021

Bologne, a long-standing Guadeloupe distillery, makes this Grande Savane Rhum Bio, an organic unaged white agricole from a single parcel of cane, bottled at a powerful 61.2%. Pressed from fresh sugarcane juice, it is a high-proof blanc in the local custom, built for clarity and freshness.

Distilled on a column still run low to keep the vegetal congeners, then rested rather than aged, it leads with fresh citrus, melon, cucumber and sugarcane on the nose, with a floral and lime lift. The palate brings sugarcane, lime and a vegetal, spicy snap, and the finish turns spicy and almond-edged with a saline thread running through. The texture is notably thick and oily, and a distinct sea-salt note gives it a coastal character. The added-sugar status is not documented and the AOC-style profile reads dry. Despite the strength it stays smooth, excellent neat or in a Daiquiri.
