A young Martinique agricole from Baie des Trésors, dry and fresh from cane juice, with floral, vegetal and peppery notes lifted by coconut and vanilla, distilled on a creole column and bottled unsweetened at 49.8%.
Description
Baie des Trésors Fleurs du Vent is a rhum agricole from Martinique, the only rum region governed by a wine style AOC. It is distilled from fresh pressed sugar cane juice rather than molasses on a creole column, the single copper column that runs at low strength specifically to keep the grassy, vegetal cane character in the spirit. No sugar is added, in keeping with the AOC, and it is bottled at a punchy 49.8%.
At one year in ex-bourbon oak this is a young, lightly wood rested agricole, and it shows it: a floral, spicy, distinctly cane forward nose, then a dry, vegetal palate with white pepper and young wood, the American oak adding a touch of coconut and vanilla cream. The finish stays fresh, floral and green. This is the bright, snappy face of agricole rather than a mellow aged one, a fine pour neat for anyone who enjoys young, dry cane juice rum, and the classic base for a Ti Punch.
