Compagnie des Indes is a respected, terroir led French bottler, and this Caraibes blend gathers molasses rum from several origins before a finishing period in Pedro Ximenez sherry casks, bottled for Perola at 43%. The PX influence is immediately clear, with sherry, cherry and candied sugar leading the nose, and the bottling is openly sweetened, so it should be taken as a sweet, dessert leaning style.
On the palate it shows cocoa and a mild, sweet character that some find a little thin, while the finish turns more interesting with dried fruit, baked apple and a ginger tinged, wintery spice.
