Description
Corman Collins bottled this single cask Diamond from 1996 with a full 25 years of age. The Diamond Savalle still gives the cleanest, most approachable of the Guyanese profiles, and a quarter century in oak has turned that clean base into something deep and rounded.
Matured in ex-bourbon and bottled at 46.6%, it is reduced rather than cask strength, which suits the gourmand style: dark fruit and caramel lead, with coffee, nuts, brown sugar and polished wood behind, and a long, lightly roasted finish. The lower strength makes it gentle and very easy to sip while keeping the dark Diamond character intact. For a drinker stepping up into aged Demerara who would rather not wrestle full proof, this is a balanced and generous choice, taken neat.
