A Barbados rum from The Rum Factory double-matured with an Oloroso sherry influence, sweet-edged with burnt sugar, dried figs and coconut over baking spice, bottled unsweetened at an easygoing 45 percent.
Description
This Barbados rum is built on the island's classic column-still distillate and given an Oloroso sherry cask role across its roughly eight and a half years, the sherry showing clearly in the glass. Bottled at a gentle 45 percent and unsweetened, it is a softer, spice-led Bajan rather than a cask-strength statement.
The nose carries sherry, cinnamon, baking spices and burnt sugar, while the palate turns full and herbal with coconut and dried figs and a fairly robust body. The finish stays on coconut and barrel with a herbal edge, and the alcohol sits a little forward for the strength. Distilled from molasses on a column still and matured with that Oloroso influence, it leans toward the rounder, sherried style of Barbados, an unsweetened after-dinner pour where the cask does much of the talking.
