Description
This Valinch & Mallet single cask draws sixteen year old pot still rum from South Pacific Distilleries in Fiji, distilled in 2004 and bottled at a full 58.1%. Fiji rum is often associated with funk, but this unsweetened release leans more toward balance and polish, surprising drinkers with how rounded it stays for the strength.
Matured in an ex-bourbon cask, it shows chocolate, caramel and vanilla on the nose, then a fruity, peppery palate with spice and dark chocolate, and a finish of spice, wood, pear and toasted notes. The funk that marks many Fijian rums is dialled back here in favour of cleaner fruit and wood, and without added sugar the 58.1% feels well integrated rather than hot. It is a single cask for experienced palates who enjoy a drier, cask strength style and want to see how that translates to Fiji.
