    Clairin is Haiti's village rum, distilled from fresh cane juice with wild, spontaneous fermentation and heirloom cane, agricole in spirit even if the word is reserved elsewhere. This is a single village Le Rocher bottled by Velier, the Genoese house that did more than anyone to bring clairin to a wider audience, aged under two years in a single ex Jack Daniels cask and described as ansyen, the Haitian term for aged.

    The wild ferment is what drives the funk, a dirty core of smoked ham, cheese and salty vegetal notes over overripe fruit. The nose runs to medicine, vegetal oil and citrus, the palate turns smoky and almost iodine like with fruit underneath, and the Jack Daniels wood adds a gentle bourbon smoke and leather without smothering the cane. At 47.7% it stays surprisingly smooth, a fun crossover for anyone who loves funky rum or peated whisky.
