Description
Domaine de Severin in Guadeloupe bottles this from a 1984 vintage given twenty-nine years in ex-bourbon, an old agricole made from fresh-pressed sugar cane juice. Guadeloupe sits under IGP rather than the Martinique AOC, but a rum aged nearly three decades is a rare thing regardless, the long maturation reshaping the spirit completely.
The profile is savoury and complex: olive, barrel, red fruits and tea on the nose, then a palate of nougat, dark chocolate and a burnt, roasted edge from the cask. The finish turns syrupy and vegetal with more nougat and barrel. It blends primary vegetal cane notes with a heavier sweetness of sugar and fruit, balanced and especially strong in its green, plant-like character. Bottled dry at 45 percent, it is a layered, oxidative old agricole for slow neat sipping, where the chocolate, nougat and vegetal depth reward patience.
