Description
Bologne is a Guadeloupe distillery on Basse-Terre working from fresh-pressed sugar cane juice. This Silver is an unaged white rum bottled at 40%, sitting under the island's IGP rather than the Martinique AOC but firmly in the cane-juice tradition.
White agricole is all about freshness and snap, so expect a grassy, vegetal character with fresh sugar cane sap, white pepper and a saline, green-olive edge, dry rather than sweet. At 40% it is approachable and clean. This is the canonical base for a Ti Punch, lime and a little cane syrup, and works well in a Daiquiri or any drink that wants bright cane character.
