Silver Seal, the collector respected Modena bottler descended from Sestante, drew this single cask from the Enmore estate, whose wooden Coffey still gives Guyana its more elegant, cedar driven Demerara. At 25 years and 55.7 percent, unsweetened and naturally presented, it shows the heavier, more earthbound side that long ageing can pull from the style.

Matured in ex bourbon, the molasses spirit opens on caramel, tobacco, prunes and old wood, then a palate of licorice, leather and roasted barrel, closing long on dark chocolate, honey and coffee. The profile is dense and earthy, the kind of dark Demerara that unfolds over a whole evening rather than a single sip.
