Description
Savanna has distilled on Réunion since 1870 and runs several very different families of rum, and this XO is its cane juice agricole side, a twelve year old from the 2005 vintage finished in port casks. Bottled at a natural 50.7%, it is the more serious, contemplative end of the house, built for slow sipping rather than mixing.
The spirit comes off a column still from fresh cane juice, aged in tropical heat that pushes oak extraction hard before a spell in port wood layers on red fruit. The nose opens on orange, citrus and a light smokiness with the port clearly present, the palate carries peppery spice, wood and cherry, and the finish runs long on port, dried fruit and warm spice, with a cognac like richness behind it. A powerful, dry agricole for drinkers who already lean toward robust, cask driven rum.
