Description
Pere Labat Dore comes from the Poisson distillery on Marie Galante, a small and well regarded producer working in the agricole tradition with fresh pressed sugar cane juice. The Dore is the lightly aged amber tier, two years in ex-Bourbon oak following column distillation, made by traditional island methods.
A short spell in cask gives an agricole a golden tint and a first layer of vanilla and dried fruit over its grassy, peppery cane core. Expect a still youthful and dry profile, with hay and tea notes typical of lightly aged Marie Galante rum rather than the deeper spice of an older vieux. Bottled at 50 percent, in line with the high proof local custom, it keeps the cane character bright.
