Description
Depaz distills at the foot of Mont Pelee in northern Martinique, where volcanic soil underpins the estate's terroir story, and has been making rum on the site since 1917. This blanc is pressed from fresh sugar-cane juice, not molasses, and bottled unsweetened in keeping with the Martinique AOC, which bans any added sugar.
Distilled low on a column still to preserve the green, vegetal congeners that define agricole, it carries the hallmark freshness of the style: cut grass and sugar-cane sap on the nose with green apple and an earthy edge, then citrus and white pepper across the palate. The finish stays earthy and lemony. At 55% it has the power for a proper Ti' Punch yet drinks honestly neat, a faithful, dry representative of the style and a reliable reference blanc.
