A parcel-driven Martinique blanc from HSE at 55 percent, focused and citrusy with fresh sugarcane, lime, florals and peppery spice, an unsweetened single-plot white with real punch for a powerful Ti Punch.
Description
HSE, Habitation Saint-Etienne, made this Parcellaire Canne d'Or from a single plot of cane at the Distillerie du Simon in Martinique, an agricole from fresh-pressed sugarcane juice under the island's AOC. From the 2016 harvest, it is unsweetened and bottled at a bold 55 percent.
Distilled on a creole column kept low to hold the green cane congeners, it is a focused, parcel-specific white: fresh sugarcane, citrus and floral notes lead, with lime and peppery spice building behind. The palate is sugarcane forward and peppery with the classic agricole cut, finishing dry, floral and lightly bitter. The single-parcel framing gives it extra citrusy intensity, and the strength makes it a serious Ti Punch base, though it rewards a careful neat pour too.
