Description
In the Saitama mountains northwest of Tokyo, Chichibu has made malt whisky since 2008 under Ichiro Akuto and his Venture Whisky company. The basin climate swings from humid summers near 35 degrees to winters below freezing, so the casks expand and contract hard and the spirit takes on wood faster than it would in Scotland. The make is double distilled in copper pot stills built by Forsyths, from mostly unpeated barley, and matured on site in dunnage warehouses.
This is unpeated single malt, matured in Japanese mizunara oak. At 3 years the spirit is in its extractive phase, pulling vanillin, oak lactones and colour quickly from the wood, which the basin's heat and cold drive harder than a cool maritime warehouse would. Mizunara lactones give sandalwood and a temple incense note. The spirit character stays fruit forward, apple and pear over a soft, malty body and a gentle spice.
This bottling was distilled in 2011, from cask 1490 + 1683 and bottled in 2015. It is a run of 538 bottles, released for Japan, bottled by ePower. Single casks like this are the heart of the Chichibu name, each one a different reading of the same young, fast matured spirit. At 61.1% it drinks well neat, with water settling the oak.
