Description
Glenfarclas from the distillery, a 25 year old, at 43%. Glenfarclas is a deep, dark Speyside malt of dried fruit, nut and spice. It holds some sixty eight thousand casks on site in dunnage warehouses, with stock from every year since 1953. Its spirit is matured almost wholly in sherry butts brought up from Jerez. It was licensed in 1836 under Robert Hay and bought in 1865 by John Grant for 511 pounds.
It was distilled to a rich, generous cut, building a deep malt of dried fruit and dark sugar. A refill bourbon hogshead held it, keeping the full character to the fore. At this evaporative stage ellagitannins lend structure while oxidation builds a richer raisin and treacle. The cool, slow dunnage ageing loses little to evaporation, the spirit holding its depth. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.
At an approachable 43% it is soft and fruity. Orange, raisin and a treacle edge, lifted by a sweet oak. A baked apple and a warm cinnamon lift the middle. A long finish carries raisin, chocolate and a treacle. This is a Speyside single malt of real standing.
