Description
La Maison du Whisky bottled this Glenfarclas, a 10 year old, distilled in 2013, from cask 2372, at 61%, one of 303 bottles. Glenfarclas is a Speyside single malt matured almost wholly in sherry casks from Jerez. Its slow, cool dunnage maturation loses very little to the angels each year.
Run slowly off the spirit still, giving a deep, full bodied Speyside spirit. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Active wood drives the maturation, the cask deep in the malt. The full spirit deepens with time, the cask drawing out its darker register.
At its natural 61% it is rich and chewy. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. Dried fruit and a treacle sit behind the spice. The finish is rounded, dark and spiced. This is a richly sherried Speyside single malt.
