Matured almost wholly in Oloroso sherry casks from Jerez. The house behind the 105, one of the first cask strength malts, from 1968. This is Glenfarclas’s deep, fruity Speyside style.

    A 24 year old Glenfarclas, a distillery bottling, from 1994, cask 1581, at 56.1%, 571 bottles in all. Glenfarclas is a Speyside single malt matured almost wholly in sherry casks from Jerez. It draws on that deep inventory for the Family Casks, single vintages reaching back to the 1950s. It has been run by six generations of the Grant family, one of Scotch whisky's last truly independent houses.

    It was drawn from a thick, heavy wash, the direct fired stills lending a nutty depth. It was fully matured in an Oloroso sherry cask, the wood deep in the rich spirit. At this evaporative stage ellagitannins lend structure while oxidation builds a richer raisin and treacle. The full spirit deepens with time, the cask drawing out its darker register. Maturation runs slow and even in the dunnage warehouses at Ballindalloch.

    At 56.1%, undiluted, it is dark and full. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. A long finish carries raisin, chocolate and a treacle. This is a rich Speyside malt of dried fruit and nut.
