    Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, bottled this Glendullan, a 15 year old, at 55.5%. A clean, grassy malt of apple, citrus and a soft spice, with dried fruit, fig and walnut from the cask. A long fermentation gives a green, grassy, lightly fruity spirit. This is a clean, fruity Speyside single malt.

    This Glendullan comes from Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, a 15 year old, distilled in 2009, from cask 10, at 55.5%, one of 344 bottles. Glendullan is a fresh, grassy Speyside malt of orchard fruit and a malty sweetness. Since 2007 its single malt has been bottled as the Singleton of Glendullan, aimed at the United States. The founding firm merged into Macdonald Greenlees and was absorbed by DCL in 1926, a forerunner of Diageo.

    It was distilled in onion shaped copper pot stills, building a clean malt of orchard fruit and a grassy edge. It was matured in an Oloroso cask, the wood working into the fruity malt. At oxidative maturity aldehydes lend a nutty edge while ellagitannins draw a gentle, drying grip across the fruit. Years in oak deepen the spirit to gold, the body growing rounder with time. A light, clean texture from the spirit carries through the maturation.

    At a hearty 55.5% it carries real weight. Pear, apple and a soft spice, with dried fruit, fig and walnut from the cask. Beneath it run green apple, pear and a soft grass. The close is light and clean, fruit over a gentle oak. This is a green, malty Speyside single malt.
