The House of MacDuff bottled this Glencadam, a 10 year old, distilled in 2012, from cask CM 299, at 65.9%, one of 209 bottles. Glencadam is a Highland single malt whose upward angled lyne arms give a light, fruity spirit. It was founded in 1825 by the merchant George Cooper, soon after the Excise Act made licensed distilling viable. The distillery markets itself on a deliberately delicate house style, all orchard and tropical fruit. Its water comes from Loch Lee in the Cairngorms, piped down through the River Esk catchment. Most of its make long went to blends; bottled single malt Glencadam was rare until a full range arrived.
Distilled from unpeated malt, for a creamy, fruity make with real elegance. Maturation came in ex-Bourbon wood, the oak gentle behind the fruity spirit. By the integrating teens the raw notes fade and esters build, the fruity spirit growing rounder and creamier. The clean, fruity spirit deepens with time, the cask drawing out a creamy honey.
At 65.9%, undiluted, it is rich and fruity. Pear, apple and a soft cream, lifted by a soft oak. Beneath it run pear, apple and a soft cream. Green apple, citrus and a soft oak see it out. This is a Highland single malt of real finesse.
